This Paleo banana bread will surely make your mouth melt. I don’t know about you but we are bread junkies in this house. We like our muffins, bagels, cake breads etc.. Banana bread is one of those staple type breads for the fall season in my house. My son has orchestra twice a week and on those days we have to get out the door an hour earlier than normal. So with getting the girls ready and making lunches and everything this is a super easy grab n go item for all of us to eat on the way to school.
Cranberry Banana Bread
1 tbsp. vanilla extract
1 tbsp. honey
1/4 cup vegan shortening (I used olive oil)
2 cups blanched almond flour
1 tsp. baking soda
Place bananas, eggs, vanilla, honey and shortening in a bowl or food processor. I use a immersion blender in a bowl. I also use olive oil or crushed pineapple in lieu of the shortening.
Pulse ingredients together.
Add in almond flour and baking soda. Pulse together.
Pour batter into a 7.5 x 3.5 greased loaf pan.
Bake at 350 for 55-65 min on center rack.
Remove from oven and cool.
This is nice and moist but would also be good with a little homemade jam on top! Enjoy!
