Cranberry Banana Bread

This Paleo banana bread will surely make your mouth melt.  I don’t know about you but we are bread junkies in this house.  We like our muffins, bagels, cake breads etc.. Banana bread is one of those staple type breads for the fall season in my house.  My son has orchestra twice a week and on those days we have to get out the door an hour earlier than normal.  So with getting the girls ready and making lunches and everything this is a super easy grab n go item for all of us to eat on the way to school.

Cranberry Banana Bread

Ingredients:

3 Bananas

3 Eggs

1 tbsp. vanilla extract

1 tbsp. honey

1/4 cup vegan shortening (I used olive oil)

2 cups blanched almond flour

1 tsp. baking soda

Directions:

Place bananas, eggs, vanilla, honey and shortening in a bowl or food processor.  I use a immersion blender in a bowl.  I also use olive oil or crushed pineapple in lieu of the shortening.

Pulse ingredients together.

Add in almond flour and baking soda.  Pulse together.

Pour batter into a 7.5 x 3.5 greased loaf pan.

Bake at 350 for 55-65 min on center rack. 

Remove from oven and cool.

 

This is nice and moist but would also be good with a little homemade jam on top!  Enjoy!

Warm Arugula Salad

Wow what slackers we’ve been on this here blog!  I’m just going to blame it on Thanksgiving.  Today is a new day and a new week.  So back on track and I have a really yummy recipe for you.

 

Warm Arugula Salad

Ingredients:

Arugula

2 mushrooms

Bacon crumbles

Shallots

Dried Cranberries

Olive Oil

Balsamic Vinegar

 

Directions:

Slice one shallot and two mushrooms.  Pour enough olive oil in a pan to coat the bottom.  Sautee mushrooms and shallots until soft.  While those are cooking toss arugula into a bowl, sprinkle some bacon crumbles and cranberries into your salad. 

I use a whole package of bacon.  I pan fry it all and crumble it up and keep it in the fridge so it’s easy to just take out anytime.  I go through about a package a week with all our meals.  I also use craisins for my dried fruit.  They are easy but I keep them light as they are high in sugars.

Add the sautéed veggies and some chopped walnuts or pecans if you desire.  This salad is delish!  And takes less than 10 min to prepare.

Easy Paleo Breakfast

I'm really new to the Paleo diet, and to be honest a couple of months ago I was giving Sommer a hard time about it.  Shhh don't tell her.  Of course now, after listening to her more and reading on my own, it really seams like a smart way to eat. 
Today I'm sharing my breakfast with you, well the recipe at least.

Spinach Eggs and Turkey Sausage

First, I should mention I'm not the best at taking pictures, but a post with out pictures isn't that exciting.  If you are anything like me, a recipe needs a picture, even an easy recipe.  Did you know, I won't buy a cook book with out pictures.  Nope never gonna happen.

1 tbsp Coconut Oil
1/2 bag fresh spinach
1 whole egg
2 egg whites

First you put the turkey sausage in the oven in tin foil to bake, 350 degrees for about 25 minutes.  Why did I prepare them this way?  Easy, NO mess!  Why did I use turkey?  I have a bad gall bladder and too much pork is bad for me.  You could use pork sausage if you like.

About 15 minutes into cooking the sausage I started to heat the coconut oil.  Once it was good and hot I added the spinach and covered it with a lid, this helps cook it faster.  Once the spinach looked good and cooked I added my eggs and scrambled it all together.

By this time the sausage was done and it was time to plate and eat.  If you are making this for more than one person just adjust the amounts of food, so each person gets the same amount.

Really you can do a lot with this little recipe, if you want you can add onions, mushrooms, anything on the Paleo food list.  I promise to have a Paleo food list up soon.

Welcome Friends!

Okay so we’re not quit finished setting up here but I thought we better not make you wait too long or you might revoke your friend card. 

For those of you who have followed Tammy and I over from our design blogs thank you!  We appreciate all your support and can’t wait to take you through the in’s and out’s of eating right and becoming a healthier you! 

For those of you who are new to this here blog and have never heard of us before thank you for trusting us to lead you in the right direction and taking charge of your personal health!  You wont regret it.

Here we plan to post weekly recipes or even bi-weekly recipes that we have found or created on our own.  We will share exercise tips, programs and regiments, great deals on equipment and anything else we think you will find useful.

We plan to do giveaways down the road as well.  Watch for things like supplement giveaways, work out equipment, online credits for free foods and hopefully some really cool stuff like maybe a new Vitamix blender!

A brief history on us…

I, Sommer am a stay at home mom to three children ages 10, 7 and 5.  I have like many others tried and failed with many programs over the years.  Not long ago I found out about the Paleo diet.  I hate to call it that because it’s not a diet.  If you are overweight sure you will loose weight on it but it’s a lifestyle and if you don’t make it a lifestyle you will not see the results it promises.  Tammy and I will go into more of the diet in a later posts.  I also started Crossfit in May 2011.  By far this is my preferred method of exercise.  It’s not for everyone.  But it can work for anyone.  Listen folks I know there is no one single method of diet or exercise that works for everyone so that is why we started this blog.  To give you lots of info, options and support to find what works best for you!

Tammy and I met 7 years ago when I bought my first home two doors down from her.  We became fast friends and learned quickly that we worked great as a team.  We started working out together, making meal plans together, even grocery shopping.  That eventually spiraled into creating, shopping and designing together hence our design blogs.

Tammy is a stay at home mother to two children ages 7 and 4.  She has a husband who does contract work in the middle east.  So she wears many hats along with her blog(s) and exercise.  She is the fitness queen.  She owns probably every workout dvd there is.  She also owns every piece of home workout equipment available.  She loves to try new things and will be primarily the one here who will be doing the reviews on new products on the market. 

Tammy just started the Paleo diet this week, yay I’m so excited!  And she has started back to her workout routine after a bit of a break.  So I fully expect to hear her whining over the next week haha.
